What should I watch first in the new DCU?

Do I need to watch the DCEU first?

Is Peacemaker Season 1 canon to the DCU?
It is useful character setup for Season 2, but the transition preserves some history while changing other details. Treat it as a recommended bridge, not a rulebook for DCU continuity.
Are The Batman and Joker in this order?
